New Spirits Of The Valley

Thanks to a relaxation of state liquor laws that have been in place since the 1920s, craft spirits are finally getting their due.

Following in the footsteps of microbreweries and wineries, small distilleries across Pennsylvania are cooking up batches of booze that are equal parts inspiration, innovation and experimentation.

In the Lehigh Valley region alone, two have already set up shop, and a third is on the way. There’s The Social Still in South Bethlehem, which opened in January; County Seat Spirits in Allentown’s Bridgeworks Enterprise Center, which opened in February; and Blackplate Distilling Co., proposed for 2016 on a former Bethlehem Steel site. Farther out, there’s Manatawny Still Works in Pottstown, which opened in 2013; Eight Oaks, which plans to open this summer in New Tripoli; and Midnight Madness Distilling outside Quakertown.

The reasoning behind the movement, Social Still co-owner Adam Flatt says, is simple: “We don’t want to drink what our fathers and grandfathers drank.”

Manatawny Still Works Master Distiller Max Pfeffer echoes Flatt’s sentiment: “Craft whiskey is very similar to craft beer 40 years ago. Everybody was drinking light lagers, and then Sierra Nevada came along and put hops in beer.”
